Fall-Off-The-Bone Bak Kut Teh in 25 Minutes with the Carl Schmidt Sohn PREPRO
Cooking homemade Bak Kut Teh (Malaysian herbal style) usually means spending over an hour slowly simmering pork ribs until they are tender. The Carl Schmidt Sohn PREPRO pressure cooker condenses that 90-minute process into just 25 minutes, delivering fall-off-the-bone ribs and a deeply flavorful, rich herbal broth.

Ingredients
Pork ribs (cut into chunks): 600g
Whole garlic bulbs (skin on): 2 large (washed, unpeeled)
Bak Kut Teh herbal soup sachet: 1 pack (store-bought Malaysian style)
Water: Approx. 1.2 liters
Light soy sauce: 2 tbsp
Dark soy sauce: 1 tbsp (primarily for color)
Oyster sauce: 1 tbsp
Optional add-ins: Tofu puffs, enoki mushrooms, shiitake mushrooms
Instructions
Blanch the Ribs: Place the pork ribs in a standard pot covered with cold water. Bring to a boil over high heat and let it rapidly simmer for 3 to 5 minutes to draw out impurities and blood. Remove the ribs and rinse them clean under running water.
Load the Pressure Cooker: Transfer the cleaned ribs, whole garlic bulbs, and the Bak Kut Teh herbal sachet directly into the Carl Schmidt Sohn PREPRO pressure cooker. Pour in the water until it just covers the ribs, ensuring the liquid level stays below the internal "Max" safety line.
Season the Broth: Add the light soy sauce, dark soy sauce, and oyster sauce directly into the pressure cooker. Stir gently to distribute the sauces.
Cook Under Pressure: Secure the PREPRO lid tightly, ensuring the safety lock is engaged, and set the steam release valve to the "Sealed/Pressure" position. Heat over medium-high until the cooker reaches pressure (the pressure indicator valve will pop up). Immediately reduce the heat to low and maintain the pressure for exactly 25 minutes.
Depressurize and Finish: Turn off the heat. Allow the cooker to depressurize naturally until the indicator valve drops completely, or carefully perform a manual release according to the product manual. Once it is safe to open the lid, turn the heat back on to a gentle simmer, toss in any quick-cooking extras like tofu puffs or enoki mushrooms, and cook for 5 more minutes before serving.
